A Swahili Recipe: Makande

Good morning,

today we have something for the food lovers: a Swahili recipe.
The dish is called Makande and it is a Maize and Beans Stew. It’s really delicious!
Traditionally it is a vegetarian dish but of course you can eat it with meat.

What you need:
225 g red kidney beans, 1 onion, 2 garlic cloves, 75 g creamed coconut, 225 g sweetcorn, 300 ml water, salt

How it is prepared:
1. Drain the kidney beans (which were soaked overnight) and place in a pan. Cover the beans with water and boil rapidly for 15 minutes. Reduce the heat and continue boiling for about one hour until the beans are tender, adding more water if necessary. Drain and discard the cooking liquid.

2. Place the beans in a clean pan with the onion (chopped), garlic (crushed), coconut, sweetcorn and salt.

3. Add the stock or water, bring to the boil and simmer for 20 minutes, stirring occasionally to dissolve the coconut.

Ready! As mentioned before you can serve it with meat, salad or vegetables.
